Giulio Bertrand had a vision to produce world class Bordeaux style wines on his estate. His initial appraisal of the Morgenster terroir turned out to be accurate, as subsequent analysis has revealed a number of favourable attributes.

The natural amphitheater created by the Helderberg and Hottentots Holland mountains creates a unique macro-climatic environment. The rocky, weathered shale-type soil found on this terroir allows for a well-drained structure which is highly regarded for producing quality wines because of the moderate vigour induced in the vines. The Mediterranean-type climate with north, north west and north east facing aspects allows for maximum sunlight penetration. Brisk breezes off False Bay add the necessary cooling effects in order to produce optimal ripe, delicate, fruit flavours.

The first new vineyards were planted in 1994 and substantial replanting was undertaken from 2007 to match new rootstocks and clones to terroir in order to achieve Bertrand's goal of producing flagship quality wine from each vine. Around 20 ha are under Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, destined for the Estate's famous Bordeaux style red blends, Morgenster and Lourens River Valley. There are also two very small plots of the Italian varietals Nebbiolo and Sangiovese.
