What you will need:1 1/2 cups couscous1 1/2 cups boiling water1 cup Morgenster Nocellara green olives, chopped1 cup chopped fresh flat-leaf parsley leaves1 tablespoon Morgenster Lemon Enhanced Extra Virgin Olive Oil2 teaspoons finely grated lemon rind1/4 cup lemon juiceSalt and freshly-ground black pepper to taste
How to prepare:
Place couscous in a heatproof bowl.
Add boiling water.
Allow couscous to stand, covered, for 5 minutes or until water is absorbed.
Stir with a fork to separate grains.
Add olives, parsley, oil, lemon rind and juice to couscous.
Season with pepper.
Toss to combine. Serve.
