Lemon, Olive and Parsley Couscous
What you will need:
  • 1 1/2 cups couscous
  • 1 1/2 cups boiling water
  • 1 cup Morgenster Nocellara green olives, chopped
  • 1 cup chopped fresh flat-leaf parsley leaves
  • 1 tablespoon Morgenster Lemon Enhanced Extra Virgin Olive Oil
  • 2 teaspoons finely grated lemon rind
  • 1/4 cup lemon juice
  • Salt and freshly-ground black pepper to taste

    How to prepare:
    Place couscous in a heatproof bowl.
    Add boiling water.
    Allow couscous to stand, covered, for 5 minutes or until water is absorbed.
    Stir with a fork to separate grains.
    Add olives, parsley, oil, lemon rind and juice to couscous.
    Season with pepper.
    Toss to combine. Serve.
