Chicken Stir Fry
Chicken Stir Fry by Gourmet Butcher in Johannesburg.

Ingredients:
750 g chicken strips
45 ml cornflour
2 carrots cut into thin strips
1 sweet red pepper, deseeded and cut into strips
1 small head of broccoli, broken in small florets (or cabbage, finely cut)
A bunch of spring onions, cleaned and cut finely
1 thumb sized piece of fresh ginger, grated
1 fresh red chilli cut into fine slices (optional)
Cook’s note: Any vegetables of choice can be used
50 g unsalted cashew nuts lightly toasted in non-stick frying pan (optional)
1 lime cut into wedges.
A bunch of fresh coriander

Marinade:
45 ml Thick Soy Sauce
45 ml Sweet Soy Sauce
45 ml Hot Sweet Chilli Sauce
25 ml Morgenster extra virgin olive oil
5ml fresh chilli
5 ml fresh garlic, crushed
45 ml Sherry
10ml dark brown sugar

Method:
Mix all the ingredients listed for the marinade. Leave to stand.
Place the chicken strips in a large flat dish, lightly coat with cornflour. Pour over half the marinade over the chicken and toss. Leave to marinate for about 20 minutes.
Heat a wok, add the Morgenster extra virgin olive oil and fry the chicken in small batches. The oil must not be too hot as the chicken will burn. Place chicken in dish and keep warm.
Fry the carrots and pepper in olive oil for a few minutes, add the broccoli, spring onions, ginger and chilli and cook for a further 2 minutes. Stir through the remainder of marinade, add the warm chicken and toss.
Serve on a bed of cooked noodles, with a wedge of lime on the side for squeezing over, and decorate with chopped fresh coriander and nuts.
