Making pesto is easy, according to Judi Dyer of Morgenster. All it takes is leaves (which could be spinach, or coriander/wild rocket, or basil), toasted nuts, garlic cloves, seasoning and grated hard cheese. Toss them into a blender and drizzle in a selected Morgenster extra virgin olive oil and you have a delicious homemade pesto to add to pastas, pizzas, bruschetta, vegetables, chicken, fish ...
